Coffee can vary in so many different ways. Bags that are sitting on cafe's shelf most likely will be slightly different to freshly roasted coffee delivered straight to you.
We don't know how the coffee at cafes are being stored or if direct sunlight has hit the bag or outside temp has affected the coffee at café level (including roast dates) so it is to be expected that bags purchased from cafes may vary from freshly roasted, directly delivered to you.
There is also a factor to the various equipment being used such as grinders where you might need to adjust the setting for a freshly roast coffee brew versus café shelf life/store brew (taste wise but should still be similar).
As brewing recipes may be a little too specific, we can also recommend to check out our Brewing Guide. This will give you the doses that is needed. We recommend to weigh your doses first and once you have it all set up, you won't really need to touch anything else moving forward (as long as blend and consistency of roast is the similar to same).
